Q: What use-case do they have?

A: NFT owners will become a part of the Velorex Members Club which has many benefits - the largest benefit by far is a huge reduction on transaction taxes - making the intrinsic value of the NFT equal to the tax amount of the buyers holdings. e.g. if you own $100k in VEX tokens, the NFT should be worth $10k to you (you could also sell the NFT if you're no longer trading VEX and saving on taxes, or keep it for the other benefits).
