Borek in Anatolian cuisine is a staple food where layers of phyllo dough are filled with different ingredients such as mince, potato, cheese, foraged greens, or anything else you may like. ‘Kereviz’ is the name of celeriac (celery root) in Turkish, most often cooked in the olive oil braising technique allowing the olive taste to combine with the vegetables. We cook the celeriac and stack it between the layers of the baked phyllo sheets then flavor it with celery butter. This union of celeriac and olive oil fulfills your taste buds.
