The 17th-Century Benedictine monk Dom Pierre Pérignon is credited with its invention after taking up the position as the abbey's cellarer and procurator in 1668. Each vintage of Dom Pérignon is unique, with grapes sourced from only the best vineyards in Champagne. he growing season threw up some challenges although it begun well with a favourable spring making for an excellent flowering. The resulting wines were reasonably successful although some producers were still reluctant to release a vintage wine. The best examples exhibited a clean, fresh character with plush, occasionally opulent, fruit and elegant structure, however, others suffered from a slight lack of acidity.
