Fluffly, Flakey, and of course buttery Southern-style biscuits, amazing with preserves and extra butter of course. One of my personal favorites is these biscuits and sausage gravy.

Approx 8-10 Southern-style Biscuits -Pre Heat oven to 425° - Bake for 14-17 minutes or until top is golden brown-

Tips: I like to put all ingredients in the fridge so everything I am working with is cold, Especially the butter and shortening. Cut the COLD butter in cubes or a cheese grater works well. Lightly flour surface for dough and the cookie cutter.

DIRECTIONS: Step 1: Spoon and level the flour to keep it fluffy. (I also like to sift my flour this is optional) put the flour in the mixing bowl.

Step 2: Measure out all dry ingredients, recommended putting each dry ingredient in separate small bowls before mixing.

Step 3: Mix all dry ingredients and mix thoroughly. Transfer to a food processor if available.

Step 4: Add the COLD Butter & Shortening (pref butter flavored) to the dry mixture using the Food processor Pulse the mixture until pea-sized butter balls form. If you don't have a food processor you can use a pastry blender. don't over mix/pulse you just want pea-sized balls to form.

Step 5: In your Mixing bowl add the mixture and slowly stir in the buttermilk. until you form a sticky dough that crumbles.

Step 6: Transfer to a floured surface, and gently knead the dough. Using your fingertips press on the dough creating a Rectangle.

Step 7: Fold the dough into 3rds creating layers, then rotate and press out the dough in another rectangle and repeat the process 3-5 times. Don't overwork you want your dough to be fluffy and rustic looking. ( Practice, Practice, and Practice you will develop the feel)

Step 8: Press out the dough again to about 1/2-1 inch thick, Rectangle depending on the size of biscuits you prefer.

Step 9: With your lightly Floured cookie-cutter press straight down on the dough (DO NOT TWIST) just use one motion down and up.

Step 10: Place on a lightly greased baking sheet, I let my biscuits touch. Then bake at 425° for 14-17 minutes until golden brown on top. -Brush with some melted butter and enjoy!
