Kadınbudu simply is a traditional recipe of rice and meat mixed with herbs. The rice is boiled and mixed with lightly sautéed minced meat then combined with the herbs and spices. The balls are then dipped in flour and eggs and fried. It is traditionally served with mashed potatoes and yogurt. At Neolokal, we make minced meat from free-range chicken and smoked veal fat. It is then mixed with fresh herbs and par-cooked rice and fried in a flour and egg mixture. We serve it with chicken jus, chicken and potato foam, chicken skin, jam of confit lemon, and potato glass.
