A 2018 Las Jaras Sparkling wine made from 97% old vine Carignan and 3% old vine Zinfandel grapes from the Ukiah Valley area of the Mendocino County region of California. The grapes were hand picked from a Fish Friendly Farming certified sustainable, non-till, dry farmed vineyard known for its gravely loam soil. The grapes were whole cluster pressed into stainless steel tanks to begin fermentation, cold-settled at 2.5 brix to bottle and finished fermentation in bottle until dry. This unique technique creates a wine that is copper in colour with aromas of green strawberries, toasted hazelnuts, hay and marshmallows with a palate of apricot, pears and a touch of cocoa that has an elegant texture and long finish. With only 467 cases produced and a cult following, this wine has easily become one to covet.
